The liquid should cover the bottom by 0.5-0.8 cm. Then you should tightly cover the form with two layers of foil so that there are no holes anywhere.
In this form, place the meat in an oven preheated to 200 degrees. After 2 hours, check it with a fork, if the fibers are easily separated and a pink liquid does not appear, and the bone is slightly exposed, then the ribs are ready. Otherwise, return them to the oven for another 20-30 minutes. Sometimes it happens that you have to bake for 3 hours if the pieces of meat are large.
But that is not all. The ribs, although already soft, do not have that amazing crust that everyone appreciates. For the crust, use barbecue sauce. You can buy it or make your own.
Homemade BBQ Sauce Recipe:
1 onion, 60 ml of ketchup, 30 ml of adjika or other hot sauce, 30 ml of apple cider vinegar, 60 g of sugar, 30 ml of vegetable oil + 20 ml for frying, 2-3 g of salt and black pepper.
Finely chop the onion and lightly fry, add all the remaining ingredients, mix, make a minimum heat and simmer for about 20 minutes, stirring regularly.
Remove the foil from the almost ready ribs, pour over them with barbecue sauce, return to the oven for a quarter of an hour. Then transfer the meat to the grill (separate or in the same oven) and hold on fire for no more than 5 minutes.

At home, it is impossible to achieve a pleasant aroma of smoke and smoked ribs, even using the "grill" mode in the oven. But there is a special flavoring food additive - liquid smoke. It has no nutritional value, contains no calories or fat. However, it is able to slow down the processes of reproduction of bacteria on the surface of the meat. Liquid smoke does not have carcinogenic properties, but the possibility of an allergy is still not excluded. You need to apply it on the meat already prepared for baking, or add it to the sauce chosen for the marinade. To add piquancy to the taste of the ribs, you can add cranberries, currants, beaks, sliced apples or quince to the mold.
For the most tender meat, marinate it in pineapple sauce for several hours, and then rub in spices and salt. This fruit contains enzymes that soften protein compounds. But the characteristic taste of pineapple may remain, which not everyone likes. To keep the flavor, the ribs can be removed from the grill and wrapped again in foil for 10 minutes. But this should not be done if they are already a little overcooked. This action leaves the natural heat from the meat with them for some more time. When baking, it is allowed to replace water with broth. It is also recommended to add a little wine to it. Alcohol helps to reveal the taste of meat.
